Thai Beef and Peanut Curry

This tasty curry is chock full of flavour but is a real doddle to prepare. The beef comes out tender and delicious, and the addition of some crunchy peanuts towards the end of cooking adds a saltiness and different texture to the dish. Serve over jasmine rice.

Ingredients List:
2 potatoes
1 onion
600g beef stewing steak
1 tin coconut milk
3 cloves of garlic
400g tin coconut milk
4 tbsp. smooth peanut butter
3 tbsp. curry powder
3 tbsp. Thai fish sauce
3 tbsp. brown sugar
300ml beef stock
75g peanuts
50g butter

Coarsely chop the onion and chop the potatoes into large chunks. Place into slow cooker.

Mince the garlic cloves. Cut the steak into chunks.

Melt the butter in a large saucepan and cook the beef and garlic together until browned on all sides. Add the beef and garlic to the slow cooker, leaving the cooking juices behind.

Return the pan to a medium heat. Stir the peanut butter, curry powder and coconut milk into the pan and cook until melted together. Add to the slow cooker.

Turn the slow cooker onto low and stir in the fish sauce, brown sugar and beef stock.

Cook on low for four to six hours, adding the peanuts half an hour before the end of cooking.

Fried Trout and Mushrooms with Lime

Ingredient List:
1/3 cup vegetable oil
2 pounds trout fillets
¼ cup milk
¼ cup all-purpose flour
3 tablespoons butter
¼ pound mushrooms, thinly sliced
1/3 cup chopped fresh parsley
Sea salt and black pepper, to taste
2 limes, cut into wedges

1) Heat oil in a large, heavy skillet over medium-high.

2) Place trout in a large bowl; top with milk and turn to coat. Place flour in a separate medium bowl; add trout and turn to coat, shaking off excess flour.

3) Place trout in skillet and cook until golden brown on both sides, turning once, about 10 minutes total. Transfer to a serving platter and cover.

4) In a separate medium skillet, melt butter over medium heat. Add mushrooms and cook until softened, about 4 minutes, stirring. Continue cooking until mushroom liquid evaporates, about 4 minutes, stirring occasionally.

5) Add parsley and seasonings to taste to mushrooms; cook 2 minutes, stirring. Spoon mixture over trout; surround with lime wedges and serve.

Corned Beef Hash

Don’t settle for canned corned beef hash; you can make it from scratch in just minutes at home.

½ pound potatoes, peeled, cut into small dice
4 tablespoons unsalted butter
1 cup diced onions
2 pounds cooked corned beef, shredded, chopped
Salt and black pepper, to taste
Fried eggs, for serving

1) Combine potatoes and water to cover in a medium pot; bring to a boil over high heat. Cook until potatoes are just tender, about 10 minutes. Drain and set aside.

2) Melt butter in a large, heavy skillet over medium. Add onions and cook until translucent, stirring occasionally, about 4 minutes.

3) Add reserved potatoes and beef; press down with a spatula to brown potatoes and beef. Cook until cook until potatoes and beef are browned and crisped, about 3 minutes. Flip and cook an additional 3 to 5 minutes, until browned and crisped. Season to taste with salt and pepper.

4) Serve warm with fried eggs.

Red Beans and Rice

Originally hailing a Cuban recipe, red beans and rice gets its red color from sausage, spices, and lots of tomatoes—it’s heavenly.

List of Ingredients:
1/4 pound of thick-cut bacon, diced
1 onion, diced
1 green bell pepper, seeded, diced
1 pound of smoked sausage, cut into ½-inch slices
1 teaspoon of dried oregano
1 teaspoon of ground cumin
1/2 teaspoon of salt
1/2 teaspoon of black pepper
1 (15-ounce) can of kidney beans, drained
1 (15-ounce) can of diced tomatoes in juice
1 (6-ounce) can of tomato paste
2 cups of water
1 cup of long-grain white rice

Preparation Method:
1. Heat a medium saucepan over medium; when hot, add bacon. Cook until soft-crisp, stirring, about 4 minutes. Add onion and bell pepper; cook until softened, stirring, about 4 minutes. Add sausage, oregano, cumin, salt, and pepper; cook until fragrant, about 2 minutes.

2. Add beans, tomatoes, and tomato paste to saucepan; mix well to incorporate.

3. Add water and rice to saucepan; stir and bring to a boil over high heat. Reduce to a simmer, cover, and cook until liquid is absorbed, about 20 minutes. Serve warm.

Swedish Meatballs & Noodles

You can easily whip up the classic Swedish dish at home. This recipe creates a hearty portion, so serve it for the whole family or a group of friends.

1 pound flat egg noodles
1 pound ground pork
1 cup breadcrumbs
¼ cup whole milk
1 egg, lightly beaten
¼ cup minced onions
1 clove garlic, minced
½ teaspoon salt
¼ teaspoon black pepper
3 tablespoons butter
¼ cup all-purpose flour
2 cups beef broth
3 tablespoons whipping cream

1) Preheat oven to 450°F. Bring a large pot of water to a boil; add noodles and cook until soft, about 4 minutes. Drain and set aside.

2) In a large bowl, combine pork, breadcrumbs, milk, egg, onions, garlic, salt, and pepper. Scoop mixture into 1-inch round balls (should make about 24); place on rimmed baking sheets. Bake until golden and cooked, about 10 minutes. Remove.

3) Meanwhile, heat butter in a medium pan over medium. Add flour and cook until golden, stirring constantly, about 2 minutes. Slowly add broth, whisking to mix; add cream and whisk well. Bring to a boil over high heat, whisking, and simmer until slightly thickened, about 2 minutes. Add meatballs and mix gently to coat.

4) To serve, place a mound of noodles in a large serving bowl; top with a few meatballs and a large spoonful of sauce.

Meatloaf with Sweet Relish

Relish takes the place of tomatoes or ketchup in this delicious meatloaf recipe. It’s bound to become a favorite in your family.

1 pound ground beef
½ cup prepared relish of choice
½ cup breadcrumbs
½ cup shredded cheddar cheese
¼ cup minced fresh parsley
2 eggs, lightly beaten
2 cloves garlic, crushed
½ teaspoon salt
½ teaspoon black pepper

1) Preheat oven to 350°F.

2) Combine all ingredients in a large bowl; mix well with hands. Press mixture into an ungreased 9-inch loaf pan.

3) Bake until internal temperature reaches 160°F, about 45 minutes. Cool 15 minutes before serving.

Burrito Surprise

List of needed ingredients:

1 pack of 12 inch tortillas
1 pound of ground beef
1 large can of refried beans
1 pound of shredded cheddar cheese
1 large onion, diced into small pieces
1 large tomato, diced into small pieces
1 jar of salsa
1 small container of sour cream
1 small container of sour cream
1 small can of black olives
1 small can of jalapenos

Preparation method:

The first thing that you are going to do is to place the ground beef in a pan and cook it over a medium heat until it is browned, then add in about three to four tablespoons of the salsa and stir it well. Take it off of the heat, but keep it warm. Now heat the refried beans and keep them warm. Now you are going to warm up your tortillas and fill each one of them with a bit of all of the ingredients, minus the sour cream and guacamole. Place the tortilla and other ingredients in the microwave for about 30 seconds to melt the cheese. Now you will top it with the sour cream and the guacamole. Finally, you are going to wrap the tortilla up into the shape of a burrito and serve it.

Pulled Pork Dish

If you are tired of cooking the same things night after night, but you are wanting to find an easy dish to make; then you will want to keep this pulled pork dish in mind. This recipe is very simple and easy to make, but the meal it produces is absolutely delicious. You will find that your whole family will love the taste of this pulled pork dish. Cooking method:

You will want to take half of your thinly sliced onions and place them into the bottom of your slow cooker. Now you will add in your pork, water, and the remaining onion slices. After you have placed everything into your slow cooker you are going to cover it and cook it on low for 8 to 10 hours. If you choose to, you can also cook it on high for 4 to 5 hours. Once this amount of time has gone by you will want to remove the pork from the slow cooker and drain the liquid out of your slow cooker and chop the meat up coarsely. You will want to get rid of the excess fat. Once you have drained the fat you will want to put the pork back into the slow cooker and add your barbecue sauce and chopped onion. Now you will cover the slow cooker and cook it on low for 4 to 6 more hours. You should make sure that you stir it occasionally. You will want to serve this pork with warm split buns and coleslaw.

Thanksgiving Turkey Giblets Gravy

It is now only a few days until Thanksgiving and chefs across America are preparing themselves for cooking turkey. Here is a great gravy recipe using the excess drippings for the Thanksgiving bird.

List of ingredients:

1/4 cup of pan drippings.
1/4 cup of flour.
1 cup of water.
2 cups of turkey stock.
Turkey giblets, cooked, chopped.
Salt and black pepper, to taste.


Pour off all turkey fat from roasting pan into a glass measuring cup.

Measure and return 1/4 cup of to the pan.

Sprinkle the flour into the turkey fat, then cook and stir for 2-3 minutes over low heat.

Add the water and 2 cups of turkey stock.

Cook, stirring and scraping up browned bits in the pan using a wooden spoon, until the gravy thickens and bubbles for 2 minutes.

Strain the gravy into a saucepan; then add the chopped giblets and liver.

Season with salt and black pepper, to taste.

Crispy Catfish with Bacon

List of ingredients:

2 lb of catfish fillets.
1/2 cup of evaporated milk.
1 tablespoon of salt.
1 dash of pepper.
1 cup of flour.
1/2 cup of yellow cornmeal.
2 teaspoons of paprika.
Dozen slices of bacon.


Dry the catfish fillets using a paper towel.

Combine the evaporated milk, salt and pepper.

Combine the flour, cornmeal and paprika.

Dip the fish fillets in the milk mixture, then roll in flour mixture.

In a heavy pan, fry the bacon until crisp. Remove the bacon, reserving the fat for frying.

Drain the bacon on paper towel.

Fry fillets in hot fat for about 5 minutes or until the catfish is brown and flakes easily.

Drain the catfish and serve with the bacon.
