Burrito Surprise

List of needed ingredients:

1 pack of 12 inch tortillas
1 pound of ground beef
1 large can of refried beans
1 pound of shredded cheddar cheese
1 large onion, diced into small pieces
1 large tomato, diced into small pieces
1 jar of salsa
1 small container of sour cream
1 small container of sour cream
1 small can of black olives
1 small can of jalapenos

Preparation method:

The first thing that you are going to do is to place the ground beef in a pan and cook it over a medium heat until it is browned, then add in about three to four tablespoons of the salsa and stir it well. Take it off of the heat, but keep it warm. Now heat the refried beans and keep them warm. Now you are going to warm up your tortillas and fill each one of them with a bit of all of the ingredients, minus the sour cream and guacamole. Place the tortilla and other ingredients in the microwave for about 30 seconds to melt the cheese. Now you will top it with the sour cream and the guacamole. Finally, you are going to wrap the tortilla up into the shape of a burrito and serve it.

Macaroni and Cheese Delight

List of needed ingredients:

1 8 ounce package of elbow macaroni
1 8 ounce package of shredded cheddar cheese
1 12 ounce container of cottage cheese
1 8 ounce container of sour cream
¼ cup of grated Parmesan cheese
A pinch of salt
A pinch of pepper
1 cup of dried bread crumbs
¼ cup of melted butter

Cooking instructions:

You will want to preheat your oven to 350 degrees. The take a large pot of water and slightly salt it. Brig the pot of water to a boil and add in your pasta. Cook the pasta until it is done and then drain the water out of it. Take a 9×13 sized baking dish and stir in the macaroni, shredded cheese, sour cream, cottage cheese, Parmesan cheese, and the salt and pepper. Now you are going to take out a small bowl and mix the dried bread crumbs and melted butter together. You are going to take the bread crumbs and melted butter mixture and sprinkle it over the top of the macaroni and cheese. Put it on your oven and bake it for about 30 minutes or until the top is a golden color.

This is one meal that you will be able to serve to your family knowing that they are going to enjoy it, you won’t get any complaints from anyone. Even your picky eaters will love it. Pulled Pork Dish

If you are tired of cooking the same things night after night, but you are wanting to find an easy dish to make; then you will want to keep this pulled pork dish in mind. This recipe is very simple and easy to make, but the meal it produces is absolutely delicious. You will find that your whole family will love the taste of this pulled pork dish. Cooking method:

You will want to take half of your thinly sliced onions and place them into the bottom of your slow cooker. Now you will add in your pork, water, and the remaining onion slices. After you have placed everything into your slow cooker you are going to cover it and cook it on low for 8 to 10 hours. If you choose to, you can also cook it on high for 4 to 5 hours. Once this amount of time has gone by you will want to remove the pork from the slow cooker and drain the liquid out of your slow cooker and chop the meat up coarsely. You will want to get rid of the excess fat. Once you have drained the fat you will want to put the pork back into the slow cooker and add your barbecue sauce and chopped onion. Now you will cover the slow cooker and cook it on low for 4 to 6 more hours. You should make sure that you stir it occasionally. You will want to serve this pork with warm split buns and coleslaw.

Light Tiramisu

List of needed ingredients:

3 tbsp of strongly brewed cold espresso coffee
1 tsp of vanilla extract
1 tbsp of brandy or rum
1/3 cup of vanilla sugar
2 egg whites
8 ounces of softened reduced-fat cream cheese
½ cup of plain yogurt
18 ladyfingers
2 ounces of grated dark chocolate

Preparation instructions:

You will want to mix together the coffee, vanilla, and brandy or rum in a bowl. Take out a second bowl and beat the sugar and cream cheese. Take out a third bowl and whisk the yogurt until it holds its shape and then fold it into the cream cheese mixture. Use a clean bowl and whisk the egg whites until it forms soft peaks. Now you will fold the egg whites into the cream cheese and yogurt mixtures. Now break half of the ladyfingers into small pieces and put them into the bottom of 6 glasses. Drizzle half of your coffee mixture onto the ladyfingers that are in the glasses. Spoon half of the cream mixture on and then sprinkle half of the grated chocolate onto the top. Once you have completed all of these steps, then you are going to repeat the process over again and finish by sprinkling on the remaining grated chocolate. The final step will be for you to put the dish into the refrigerator to chill for about 24 hours. Once it is chilled, it will be ready for you to serve. This is a great tasting dessert that doesn’t taste like it would be low in calories. You will feel as if you are eating a regular dessert even though this recipe is actually a low calorie dessert.
